Weekly Wrap Up
This past week started on a high note, with brunch, a little shopping and some fro-yo…but quickly downgraded from awesome to exhausting with an unlimited supply of boogie-sucks, 2am coughing-crying fits and a lot of help from chamomile tea and Vicks babyrub…thankfully, Zion is on the mend and Jerry and I seem to be keeping the "ickie-sickies" at bay. We finished our week with good news (still building suspense here peeps), a pumpkin carving and today, as I post this, our first snow of the season, which is already piling up over an inch.

Recipe of the Week: Mole Chili & Jalapeno Cornbread Muffins
One of the best recipes I have ever discovered…this flavorful aromatic chili is the perfect fall dish to make at home or make for friends. When the secret ingredient is chocolate, how can you go wrong? And you know how most chili dishes taste better a few days later? This one tastes AMAZING and cooks in 20 minutes! Don't be fooled by the daunting mention of jalapenos, baking them removes their heat!
Mole Chili Recipe:
Ingredients:
1 lb. ground beef
1 c. chopped onion (about 1 medium onion)
1 garlic clove, minced
1 14.5oz can of diced tomatoes, undrained
1 c. water
2 Tbsp. chili powder
1 oz. semisweet chocolate, coarsely chopped
1 tsp. ground cumin
1 tsp. salt
1/2 tsp. dried oregano
Reduced fat sour cream (optional)
Fresh chopped cilantro (optional)
Directions:
1. Cook beef in a large saucepan over medium-high heat until browned, stirring to crumble. Drain, if necessary, and return beef to pan.
2. Add onion and garlic to pan; cook 4 minutes or until tender. Add tomatoes and remaining ingredients; cover and simmer 7 minutes.
3. Serve immediately. Top with sour cream and cilantro, if desired.
Jalapeno Corn Mini Muffins Recipe:
Ingredients:
3/4 c. self-rising cornmeal mix
1/2 c. fat-free buttermilk
2 Tbsp. minced, seeded jalapeno peppers
1 1/2 Tbsp. canola oil
1 large egg
Cooking spray
Directions:
1. Preheat oven to 425.
2. Lightly spoon self-rising cornmeal mix into measuring cup; level with a knife, and place in a large bowl.
3. Combine butttermilk, jalapeno peppers, oil and egg in a small bowl. Pour buttermilk mixture into cornmeal mixture. Stir just until combined.
4. Coat 12 miniature muffin cups with cooking spray; spoon batter evenly into cups. Bake at 425 for 17 minutes or until lightly browned. Remove from pans immediately; serve warm.

Top 5: October 2011 Events
Oh October, the month where days turn a little darker, a little colder and remind me how very few of them are left in the year!! Looking forward to:
1. Date Night! I am slightly embarrassed to admit that Jerry and I have not been out for a date in many months. That is all about to change! We have a sitter booked for the evening and will be heading out for a little romance - all a surprise to me at this point. Can't wait to follow up with a post for that night!
2. Mom's Group! I volunteered to host a mom's group (sans kids) on Thursday evenings (bi-weekly) starting on the 6th. I am not only excited to dig into another meaningful study of God's word, but to reconnect with some ladies I have not seen for most of the Summer.
3. Family Visit! My wonderful mother and father in-law will be joining us the second weekend of the month and we have already begun to plan a trip to farm for fall festivities including: apple picking, pumpkin picking, hayrides, corn mazes and petting fuzzy little farm animals. I can't wait for Zion to experience this for the first time, and in the company of her grandparents!
4. Fall Festivals! New York City has a ton of kid-friendly events to celebrate fall. While Jerry and I are not big on Halloween itself, we are fine with Zion experiencing the fun of the non-scary activities. We'll be hoping to attend a few different events, possibly the Madison Square Park Fall Kids Fest, Halloween Parade & Pumpkin Sail and the 69th Street Halloween Block Party.
5. Baking/Cooking with Fall Ingredients: This year I plan to make my first ever Pumpkin Pie, Fresh Spiced Apple Cider with my juicer (and the apples we pick), Pumpkin Bread, delicious roasted Acorn Squash and so much more! Don't worry I will definitely be posting up recipes as often as I can!
